I have decided to make a true effort to eat healthier, and since last week’s FYFF was pretty healthy (or healthy compared to a college student’s diet), why not continue this week with more healthy food? This week features my favorite salad, one that is super easy and soooo yummy.
- Baby Romaine lettuce (or whatever mixed greens you prefer)
- Stuffed Green Olives
- Italian Vinaigrette Dressing of your choice
- Pepperoni (not pictured because I forgot to include it…whoops)
I’m not even going to bother writing a “how to” section in this week’s post because honestly – this salad is literally just chopping up the onion and pepperoni and then mixing everything together in a bowl to your preference. So if you want more onion or less pepperoni, go for it. Or if you prefer black olives to green – swap em out!
